Persian inspired Fried Rice

A cozy, golden twist on fried rice with Persian soul.
Sweet onions are sautéed until soft and fragrant, then tossed with colorful mixed veggies and folded into rice kissed with warm tomato-turmeric spice. Finished bright with fresh cilantro and a squeeze of lemon, this dish is vibrant, comforting, and effortlessly craveable — the kind of everyday magic that turns simple ingredients into something special.

Ingredients

  • Cooked rice (day-old works best)

  • 1 small onion, finely chopped

  • 1 bag frozen mixed chopped vegetables
    (carrots, sweet peas, green beans)

  • Tomato-turmeric sauce

  • Olive oil

  • Salt, to taste

  • 1–2 eggs (optional)

  • Lemon wedges, for serving

  • Fresh cilantro, chopped (for garnish)

Instructions

1. Sauté & soften
Heat olive oil in a pan over medium heat. Sauté the chopped onion until soft and lightly golden, then add the frozen vegetables and cook until heated through.
 

2. Add egg (optional)
Push everything to the side, scramble the egg(s) in the pan until just set, then mix together.
 

3. Sauce & rice
Stir in the tomato-turmeric sauce, then add the cooked rice. Toss well and cook until everything is evenly coated and warmed through.
 

4. Finish & serve
Season with salt, remove from heat, garnish with fresh cilantro, and serve with a lemon wedge.
