Coconut Turmeric Chicken

Tender chicken and colorful vegetables simmer in creamy Coconut Turmeric Super Sauce, bringing warmth, depth, and just the right hint of spice. Served over fluffy jasmine rice, it’s the kind of meal that feels familiar but tastes a little more special.

Ingredients

1½ lb (680 g) chicken breast, cut into bite-size pieces

1 tbsp vegetable or neutral oil

1 medium yellow onion, finely chopped

3 cloves garlic, minced

1 tbsp fresh ginger, grated

1½ cups mixed vegetables (optional)
(zucchini, baby corn, sliced bell peppers) -
¾ cup Coconut Turmeric Sauce

2 cups fresh spinach
-
1–2 tsp flour (optional, to thicken if needed)

Salt & black pepper, to taste

½ cup chopped cilantro, for garnish

Cooked jasmine rice, for serving

Lime wedges, for finishing



Instructions
1. Build the flavor base
Season chicken with salt and pepper. Heat oil in a large skillet over medium heat. Sauté onion until soft and translucent, about 3–4 minutes. Add garlic and ginger and cook for 1–2 minutes until fragrant.
2. Cook the chicken
Add chicken to the skillet and cook, stirring occasionally, until lightly golden on the outside, about 4–5 minutes. Add optional vegetables and cook for another 2 minutes until just tender.
3. Simmer & finish
Stir in Coconut Turmeric Sauce and bring to a gentle simmer. Cook uncovered for about 10 minutes, until chicken is fully cooked and sauce is silky. If a thicker sauce is desired, whisk flour with a splash of water and stir in gradually. Add spinach and let it wilt. Adjust seasoning with salt, pepper, and a squeeze of lime.
4. Serve
Spoon the coconut turmeric chicken and vegetables over fluffy jasmine rice. Finish with fresh cilantro and extra lime wedges. Serve warm and enjoy.
