
Silky Coconut Turmeric Linguine

Ingredients

8 oz (225 g) linguine (or fettuccine; gluten-free works)

1 tbsp extra-virgin olive oil

1 medium yellow onion, diced

3 garlic cloves, minced

8 oz mushrooms, sliced

½ tsp red pepper flakes (optional, for gentle heat)

1 cup Coconut Turmeric Coriander Super Sauce

1 tbsp tamari or soy sauce (optional)

2 tbsp all-purpose flour (optional, for extra thickness)

¾ cup coconut milk or oat milk

1 tbsp nutritional yeast or finely grated parmesan

½ tsp kosher salt, plus more to taste

Microgreens, for finishing

Cashews or pine nuts, lightly toasted, for garnish

Instructions
1. Cook the pasta
Bring a large pot of salted water to a boil. Cook linguine until al dente according to package directions. Reserve ½ cup pasta water, then drain.
2. Build the base
Heat olive oil in a deep sauté pan over medium-high heat. Add onion with a pinch of salt and cook 5–6 minutes, until soft and lightly browned. Add garlic and red pepper flakes (if using) and cook 1 minute until fragrant. Add mushrooms and cook 2–3 minutes until tender.
3. Make the sauce
In a bowl, whisk Coconut Turmeric Coriander Super Sauce with tamari and flour (if using) until smooth. Pour into the pan and whisk to combine. Reduce heat to medium-low, add coconut milk (or oat milk), nutritional yeast/parmesan, and salt. Simmer gently for about 5 minutes, whisking occasionally, until thick and silky.
4. Toss & finish
Add hot pasta to the sauce and toss with tongs until well coated, adding a splash of reserved pasta water if needed. Taste and adjust seasoning. Serve topped with microgreens, toasted nuts, and optional herbs or parmesan
