Ingredients

  • Mixed greens (arugula, baby kale, spinach, romaine, or butter lettuce)

  • Butternut squash, sweet potato, or delicata squash, cubed

  • Olive oil

  • Salt & pepper

  • Apple or pear, thinly sliced

  • Toasted nuts or seeds (pecans, walnuts, pumpkin seeds, or sunflower seeds)

  • Dried cranberries or pomegranate seeds

  • Goat cheese or feta (optional)

  • Leemu Lemon Turmeric Sauce

Instructions

1. Roast the vegetables
Toss squash with olive oil, salt, and pepper. Roast at 425°F until tender and lightly caramelized.
 

2. Prep the base
Add mixed greens to a large bowl and top with sliced apple or pear.
 

3. Assemble
Add roasted vegetables, nuts or seeds, and dried cranberries or pomegranate seeds.
 

4. Finish & serve
Drizzle with Leemu Lemon Turmeric Sauce and top with cheese if using. Serve immediately.
