Ingredients

Mixed greens (arugula, baby kale, spinach, romaine, or butter lettuce)

Butternut squash, sweet potato, or delicata squash, cubed

Salt & pepper

Apple or pear, thinly sliced

Toasted nuts or seeds (pecans, walnuts, pumpkin seeds, or sunflower seeds)

Dried cranberries or pomegranate seeds

Goat cheese or feta (optional)

Instructions
1. Roast the vegetables
Toss squash with olive oil, salt, and pepper. Roast at 425°F until tender and lightly caramelized.
2. Prep the base
Add mixed greens to a large bowl and top with sliced apple or pear.
3. Assemble
Add roasted vegetables, nuts or seeds, and dried cranberries or pomegranate seeds.
4. Finish & serve
Drizzle with Leemu Lemon Turmeric Sauce and top with cheese if using. Serve immediately.
