Toasty Tomato Turmeric Spinach Chicken

This is comfort food with a glow-up. Ground chicken simmers with onion, ginger, and cherry tomatoes, then gets wrapped in Tomato Turmeric Super Sauce for a warm, savory base that’s rich without feeling heavy. A generous handful of spinach wilts right in, adding freshness and balance to every bite.

It’s spoonable, cozy, and endlessly versatile—equally great scooped up with naan, piled over rice, or served bowl-style with farro. Bold, nourishing, and easy enough for a weeknight, this is one of those dishes that tastes like it took way more effort than it did.

Ingredients

  • 1 lb  chicken (chopped in cubes)

  • 1 tbsp olive oil

  • 1 medium yellow onion, finely chopped

  • 1 tbsp fresh ginger, grated (optional)

  • 1 cup Tomato Turmeric Super Sauce

  • 6 cups fresh spinach

  • 1 cup cherry tomatoes, halved

  • ¼–½ tsp red pepper flakes (optional)

  • Salt & black pepper, to taste

For serving: naan, cooked rice, or cooked farro

Instructions

1. Build the base
Heat olive oil in a large skillet over medium heat. Add onion and cook until soft and translucent, about 3–4 minutes. Add ginger (if using) and cook for 1 minute until fragrant.

2. Brown the chicken
Add chicken, season lightly with salt and pepper, and cook, until fully cooked and lightly browned, about 6–8 minutes.

3. Sauce & wilt
Stir in Tomato Turmeric Super Sauce and cherry tomatoes, bringing everything to a gentle simmer. Fold in spinach and red pepper flakes, letting the spinach wilt completely.

4. Serve
Taste and adjust seasoning. Serve warm with naan, over rice, or spooned over farro.
