Zesty Sunshine Chickpea Bowl

This is the kind of low-effort, high-reward bowl you’ll come back to again and again. Fluffy rice, tender chickpeas, and crisp sugar snap peas get tossed with juicy cherry tomatoes and finished in Coriander Turmeric Super Sauce for a warm, herby, feel-good bite. Fresh cilantro brings everything together, making it light, vibrant, and deeply satisfying without feeling heavy.

As it sits, the rice soaks up the sauce and gets even better. Enjoy it warm, at room temp, or straight from the fridge—add a drizzle of olive oil or a squeeze of lemon to refresh, and you’ve got an easy meal that always hits.

Prep Time: 10–12 minutes
(Rinsing chickpeas, slicing snap peas, halving tomatoes, chopping cilantro)

Cook Time: 5–7 minutes** (if warming)
(Gently heating rice & chickpeas in olive oil)

Ingredients

  • 3 cups cooked rice (jasmine or basmati)

  • 2 tbsp extra-virgin olive oil

  • 2 (15-oz) cans chickpeas, drained and rinsed

  • 1½ cups sugar snap peas, sliced diagonally

  • 1½ cups cherry tomatoes, halved

  • ¾ cup Coriander Turmeric Super Sauce

  • ½ cup fresh cilantro, roughly chopped

  • Salt & black pepper, to taste

  • Optional: lemon wedges or chili flakes for finishing

Instructions

1. Warm the base (optional)
If using leftover rice or chickpeas, gently warm them in a large skillet with olive oil over medium heat, just until heated through. (You can also keep everything room temperature for a no-cook version.)

2. Build the bowl
Add chickpeas, sugar snap peas, and cherry tomatoes to the rice. Toss gently to combine.

3. Sauce it up
Pour in Coriander Turmeric Super Sauce and mix until everything is evenly coated and glossy. Season with salt and pepper to taste.

4. Finish & serve
Fold in fresh cilantro just before serving. Enjoy warm, at room temperature, or chilled. Finish with a squeeze of lemon or a drizzle of olive oil if desired.
